cherry pancakes from switzerland
all you need:
- 200g plain flour
- 250ml milk
- 2 eggs
- 1 sprinkle salt
- 400g cherries
- 1 tbsp butter
- sugar
mix the flour with the milk and add the yolks and the salt.
beat the two egg whites with an electric mixer until they form peaks and add them to the pastry. then mix in the cherries.
bake the pancakes in butter, using a flat pan and serve them with a bit of sugar and a lot of syrup.
